Our beef herd is slowly growing. You’ll recall ‘TinkerBell’ was our first beef baby born this year and soon followed by ‘Mame’. We’re hoping they will make good replacement heifers. Their sire is the registered Hereford, Enhancer, and their mamas are Simental-Herford crosses. Our market beef are Hereford-South Devon crosses from good neighbors and friends who raise their beef naturally without hormones or chemicals. We also have one Hereford-Simental cross for market. They’ve enjoyed good pastures, about 2 pounds of corn a day, and supplemental timothy and clover hays. They started the summer at about 720 pounds and have grown to an estimated 920 pounds. At a 50-60% carcass yield, hanging weight will be about 550 pounds. We keep records of our market beef, using names rather than numbers. As most customers don’t care to know the name of the beef they are eating, we won’t publish their names here. The steers will be butchered on the farm. This avoids the stress and catecholamine release of transport to a strange place for slaughter. We think it is more humane for the animal and minimizes the adverse effects that catecholamines can have on flavor and meat texture. Our local processor, Stuffie’s, Hillman, MN , has done a good job for us in the last few years and listens to customer preferences. Customers may expect a call from them this year if they need to clarify processing instructions. Thanks to customers who returned their processing instructions early. It helps keep everyone’s beef on schedule. |
