From small seeds, great trees grow recalls the Parable of the Mustard Seed. Our first year of harvesting maple sap and cooking our own syrup is very much like that small mustard seed. We hope it grows into that Great Tree. The flavor of our syrup was a total surprise being so much richer and full bodied than all the retail maple syrups we’ve enjoyed. The “secret”, if there is one, to this flavor is something we’ll be refining and exploring in the years to come. Grandma Perk, in her 91st year on this good Earth, thoroughly enjoyed running the farm EUV (electric utility vehicle AKA golf cart) from tree to tree collecting sap. The first tasting proved that many hours of stoking the fire was indeed worthwhile.
